Hot and spicy Chu Chee curry. A step by step guide

So we have put together this Chu Chee curry recipe video showing you a step by step guide to preparing a delicious Chu Chee curry. Chu Chee curry is a fiery and delicious Thai curry with fish sauce, basil, cucumber, green beans and chilli at its heart. This recipe video is the latest in our series of recipe videos.

Chu Chee curry recipe steps.

This recipe is designed to serve one. However, if you are adjusting it for two people just double the ingredients.

First, you will need the ingredient list:

  • 50g fine green beans.

  • Some fresh basil.

  • 1 tbsp of red curry paste.

  • 2 - 3 lime leaves.

  • 2 tbsp of fish sauce.

  • 1 red chilli.

  • 70g onion.

  • 30g of cucumber.

  • 150g of organic or free range chicken breast.

Now, the steps.

  1. Add cooking oil to a hot pan or wok.

  2. Add the red curry paste.

  3. Add 2 tbsp of fish sauce.

  4. Add the lime leaves (finely chopped)

  5. Cook for about 30 seconds on a high heat.

  6. Then add the chicken and cook it all the way through. (About 3 mins)

  7. Now add the onion, green beans, cucumber and then the chilli.

  8. Let it cook for 2 minutes.

  9. Now, add the fresh basil.

To plate, serve in a bowl and garnish with fresh chilli and coriander and serve with fragrant steamed jasmine rice.
